Smoke sausages, hams, bacons and other meats Cut whole carcasses, sides and quarters Assist customers with their meat selections, providing knowledgeable recommendations Maintain cleanliness and organization in the butcher area and kitchen. Adhere to Hazard Analysis and Critical Control Points (HACCP), Canadian Food Inspection Agency (CFIA) and food safety standards Ensure food storage conditions and food safety regulations are met May supervise, train or transfer skill to other butchers or meat cutters Other duties that apply.
